Fatfree corn bread

Yield: 8 Servings

Measure Ingredient
1½ cup Yellow cornmeal
½ cup White or whole wheat flour
1 tablespoon Baking powder
1 Egg or equivalent
1 cup Nonfat milk or soy or rice milk
1 can (16- or 17-oz) creamed corn
¼ cup Chopped onion
2 tablespoons Chopped red pepper or pimento; more or less
1 can (small) ortega chilies
1 teaspoon Chopped jalapeno chilies (as much or as little as you dare)

Mix dry ingredients. Mix wet ingredients. Blend together. Bake 425 degrees for 35 - 40 minutes in a 8 inch square pan or 15 - 20 minutes in muffin pans.
