Fatfree corn bread

Ingredients

| 1½ | cup | Yellow cornmeal |
| ½ | cup | White or whole wheat flour |
| 1 | tablespoon | Baking powder |
| 1 | Egg or equivalent | |
| 1 | cup | Nonfat milk or soy or rice milk |
| 1 | can | (16- or 17-oz) creamed corn |
| ¼ | cup | Chopped onion |
| 2 | tablespoons | Chopped red pepper or pimento; more or less |
| 1 | can | (small) ortega chilies |
| 1 | teaspoon | Chopped jalapeno chilies (as much or as little as you dare) |

Mix dry ingredients. Mix wet ingredients. Blend together. Bake 425 degrees for 35 - 40 minutes in a 8 inch square pan or 15 - 20 minutes in muffin pans.
