Exotic fruit cups

Measure Ingredient
2 \N Florida pink grapefruit
1 small Star fruit; sliced
1 \N Red apple; cored and sliced
1 \N Kiwi fruit; peeled, halved and
\N \N ; sliced
2 ounces Strawberries; hulled and sliced
2 tablespoons Kirsch
2 tablespoons Freshly squeezed Florida pink grapefruit
\N \N ; juice
1 tablespoon Sesame seeds
\N \N Freshly ground white pepper
1 pinch Freshly grated nutmeg
\N \N Fresh sprig of mint to garnish

1. Cut each grapefruit in half through the centre then using a small sharp knife carefully cut out the halved segments, leaving the membranes in the shell.

2. Place the grapefruit segments in a bowl and toss together with the star fruit, apple, kiwi fruit, strawberries, Kirsch and grapefruit juice.

3. Using a grapefruit spoon, scoop out any remaining membrane from the shells and discard. Spoon the fruit mixture back into the shells.

4. In a small bowl combine the sesame seeds, pepper and nutmeg and sprinkle over the fruit. Garnish with a fresh sprig of mint and serve well chilled.
