Eggless spice cake #1

Yield: 18 Servings

Measure Ingredient
1½ \N Stick butter
1½ cup Sugar
3 cups Sifted cake flour
1 teaspoon Cinnamon
1 teaspoon Allspice
1 teaspoon Cloves
1½ cup Buttermilk; at room temperature
1½ teaspoon Baking soda
1⅓ cup Chopped pecans
1½ cup Raisins

Grease a 9x13 pan or 3 (8 inch) pans. Preheat oven to 350ø. Cream butter and sugar together. Sift flour with spices. Add soda and dissolve in buttermilk. (Do not do this too early as the buttermilk expands.) Alternately add the buttermilk mixture and flour mixture to creamed butter, mixing well as you go. Add pecans and raisins. Bake at 350ø for 25 minutes.

Serve with Penuche Frosting (see recipe). Calories: 309 per serving. Yield: 18 servings.
