| 15 | ounces | Skim milk ricotta |
| 1 | medium | Can crushed pineapple; (reserve juice) |
| 1 | Egg | |
| 1 | teaspoon | Vanilla |
| 6 | packs | Artificial sweetener |
| 1 | pinch | Salt |
| ½ | cup | Pineapple juice; (from can of pineapple) |
| 1 | teaspoon | Lemon juice |
| 1 | pack | Unflavored gelatin |
Directions

Mix first 6 ingredients. soften gelatin in pineapple juice and add to mixture. Pour into 9-inch pie plate and sprinkle cinnamon on top. Bake for 15 minutes at 350 degrees. Cool and chill.
