Ingredients

| 5 | pounds | Broiler-fryers chicken |
| 3 | cups | Pineapple chunks; fresh, |
| Canned or frozen | ||
| 2 | tablespoons | Ginger root, grated -OR- |
| 1 | teaspoon | Ground ginger |
| 1 | cup | Pineapple juice |
| 1 | cup | Soy sauce |
| 2 | Cloves garlic, minced | |
| 3 | tablespoons | Oil |
Directions
Clean and cut the fryers. Combine all the above ingredients (with exception of oil) for a marinade. Cover chicken and let stand at least 4 hours. Turn often. Drain. Brown chicken in oil in a heavy skillet. Place meat in a greased casserole. Bake in 325 oven for an hour, or until tender.
