Date filled oatmeal cookies

Ingredients

2cupsWater
2cupsGround dates
2tablespoonsButter
6cupsBrown sugar
8Eggs; beaten
4teaspoonsVanilla
8cupsSifted flour; (sifted----yikes)
4teaspoonsBaking powder
4teaspoonsSalt; (wow, that's a lot)
2teaspoonsSoda
10cupsQuick oats

Directions

Cook first 3 ingredients for 15 minutes. After cooking, stir in 2 TBl flour and cool. Cream butter and sugar well. Add eggs and vanilla. Mix well. Add dry ingredients. Mix well. Chill at least one hour. Roll out on floured surface. Put filling on one cookie and top with another and seal the edges.

Bake at 375 degrees. Cut a small hole in the top so cookie won't explode.

I haven't tried this, I'd be the only that would eat it---I just love dates. Amish Country Cookbook
