Crusty cuban bread

2 cups Bread flour
½ teaspoon Yeast
1¼ cup Water
1½ teaspoon Sugar
1 teaspoon Salt
3 cups Bread flour
2 teaspoons Yeast
1½ cup Water
2 teaspoons Sugar
1 teaspoon Salt
3½ cup Bread flour
2½ teaspoon Yeast

SMALL LOAF

MEDIUM LOAF

LARGE LOAF

bake according to your machine's directions using French or Basic cycle.

This is a low rising bread du to the lack of oil and small amount of sugar.

Keep an eye on the dough and add a tablespoon or so of water if the dough looks dry or if the machine sounds like it's struggling. (the above notes are from the book.)
