Heat butter in a 4 cup glass jug, covered with a paper towel, on HIGH for 45 seconds, or until melted. Add chopped onion. Cook on HIGH for 2-3 mins.
until softened, stirring once. Stir in flour until blended. Cook on HIGH for 3-4 mins. until sauce has thickened and is smooth, stirring twice.
Season with salt, pepper and nutmeg. Combine onions and sauce in a 23cm round baking dish. Cook on HIGH for 3-5 mins. until sauce bubbles, stirring halfway through cooking. Sprinkle, if you like with paprika.
