Creamy chipped beef

Ingredients

| 4 | tablespoons | Butter or margarine |
| 4 | ounces | Dried beef -- torn into pieces |
| 2 | tablespoons | Onion -- finely chopped |
| 3 | tablespoons | Flour |
| 2½ | cup | Milk |
| 1 | cup | Sour cream |
| 2 | tablespoons | Parsley -- finely chopped |
| 4 | English muffins -- split | |
Directions
Melt the butter in a skillet over medium heat. Add the beef and onion and saute until the onion is soft, 5 to 10 minutes. Add the flour, stir for 1 minute, and then gradually add the milk. Cook, stirring, until the sauce is smooth and thick, 5 to 10 minutes more.
Stir in sour cream and parsley and cook until heated through, 1 minute. Serve on toasted english muffin halves.
