Creamette rotini taco salad

1tablespoonOlive oil
1poundsBoneless, skinless, chicken
Breast, chopped
1tablespoonTaco seasoning mix
1cupFrozen corn, thawed, cooked
2mediumsTomatoes, chopped
1smallGreen pepper chopped
3eachesGreen onions, sliced
cupSliced ripe olives
1canBlack beans, drained
(16 oz)
1cupShredded cheddar cheese
¾cupBottled Italian dressing
½cupThousand island dressing
1cupChopped lettuce
1cupTaco chips

Directions

Prepare Rotini according to package directions, drain. In medium skillet, heat oil. Add chicken; sprinkle with taco seasoning.

Stir-fry until chicken is no longer pink. Combine rotini, chicken, and next seven ingredients. Blend together Italian and Thousand Island dressings. Toss with salad mixture. Arrange lettuce and taco chips on large platter, top with salad greens. Refrigerate letfovers.
