Confetti mushroom and rice side dish

Yield: 6 servings

Measure Ingredient
2 tablespoons Butter or margarine
½ cup Diced red bell pepper
3 tablespoons Sliced green onions including tops
1 cup Uncooked long grain white rice
½ teaspoon Dried thyme
2 cups Chicken broth
2 cans Green Giant Sliced Mushrooms, drained

Melt margarine in medium saucepan. Add bell pepper, onions and uncooked rice. Saute for 2-3 minutes until vegetables become tender and rice begins to brown. Add thyme, chicken broth and mushrooms; bring to a boil. Cover; reduce heat and simmer for 20 minutes or until liquid is absorbed. Let stand 5 minutes.
