Clean-out-the-fridge pilaf

Ingredients

2cupsBrown basmati rice
4cupsWater
poundsMushrooms, chopped
½A green pepper, diced
½A red pepper, diced
1Onion, chopped
2Plum tomatos, chopped salt to taste

Directions

Throw everything in a pot, bring to a boil, cover and simmer for 45 minutes until the rice is cooked.
