Classic mint tabouli salad

Ingredients

1cupFine bulgur, washed
2cupsChopped fresh parsley
1cupChopped scallions
½cupFresh mint, chopped
½cupLemon juice
1teaspoonAllspice
1pinchSalt
½teaspoonPepper
½cupOlive oil
6Tomatoes, cut into small pieces
Lemon slices, for garnish
1Head Romaine lettuce, washed, broken up

Directions

1. Soak bulgur in cold water for 3 hours 2. Drain bulgur; mix with remaining ingredients, except for lemon slices and Romaine lettuce.

3. Arrange lettuce on a large salad platter. Scoop tabouli salad into the center of the platter, on top of the lettuce. Garnish with lemon slices and serve.
