Classic mint tabouli salad

Yield: 8 Servings

Measure Ingredient
1 cup Fine bulgur, washed
2 cups Chopped fresh parsley
1 cup Chopped scallions
½ cup Fresh mint, chopped
½ cup Lemon juice
1 teaspoon Allspice
1 pinch Salt
½ teaspoon Pepper
½ cup Olive oil
6 Tomatoes, cut into small pieces
Lemon slices, for garnish
1 Head Romaine lettuce, washed, broken up

1. Soak bulgur in cold water for 3 hours 2. Drain bulgur; mix with remaining ingredients, except for lemon slices and Romaine lettuce.

3. Arrange lettuce on a large salad platter. Scoop tabouli salad into the center of the platter, on top of the lettuce. Garnish with lemon slices and serve.
