Scallops in lime juice and glazed endive salad

Ingredients

| 1 | Lime; grated fine , zest | |

| 75 | millilitres | White wine |
| 1 | Shallot; grated | |
| 75 | millilitres | Extra virgin olive oil |
Directions
Remove the roe, clean and thinly slice the fresh scallops.
Mix all the other ingredients together and place into a container. Add the sliced scallops and leave in the marinade for approximately 20 minutes.
Remove and place on to a plate with a little warm glazed endive.
