Scallops in lime juice and glazed endive salad

450gramsFresh king scallops
1teaspoonGreen peppercorns; crushed
Salt and pepper
2Limes; juice of
1Lime; grated fine , zest

75millilitresWhite wine
1Shallot; grated
75millilitresExtra virgin olive oil

Directions

Remove the roe, clean and thinly slice the fresh scallops.

Mix all the other ingredients together and place into a container. Add the sliced scallops and leave in the marinade for approximately 20 minutes.

Remove and place on to a plate with a little warm glazed endive.
