Quinoa tabouli salad

Ingredients

2cupsEden Quinoa; rinsed
¾cupFresh parsley, chopped
¾cupRipe tomatoes; diced
1Cucumber; peeled seeded & diced
1bunchGreen onions; chopped
5Sprigs fresh mint; chopped
4tablespoonsEden Extra Virgin Olive Oil
2tablespoonsEden Ume Plum Vinegar (or more to taste)
2Garlic cloves peeled and pressed

Directions

Cook Quinoa according to package directions. Cool. Combine Quinoa, parsley, tomatoes, cucumbers, garlic, green onions, and mint. Mix well. Combine olive oil, ume plum vinegar and garlic and mix into salad.
