Quinoa tabouli salad

Ingredients

Quantity Ingredient
2 cups Eden Quinoa; rinsed
¾ cup Fresh parsley, chopped
¾ cup Ripe tomatoes; diced
1 Cucumber; peeled seeded & diced
1 bunch Green onions; chopped
5 Sprigs fresh mint; chopped
4 tablespoons Eden Extra Virgin Olive Oil
2 tablespoons Eden Ume Plum Vinegar (or more to taste)
2 Garlic cloves peeled and pressed

Directions

Cook Quinoa according to package directions. Cool. Combine Quinoa, parsley, tomatoes, cucumbers, garlic, green onions, and mint. Mix well. Combine olive oil, ume plum vinegar and garlic and mix into salad.
