Spicy tabouleh

Yield: 4 Servings

Measure Ingredient
¼ cup Bulgar wheat (soak about 1/2 hour;dry)
¼ \N Red onion; sliced
¼ \N Bell pepper; sliced
1 \N Celery stalk; diced
½ \N Cucumber; chopped
1 bunch Fresh cilantro; chopped
¼ bunch Fresh parsley or about 1 Tbs.dry
¼ cup Corn kernals
¼ cup Whole red;pinto or black beans
1 \N Spicy (16-oz) picante sause
\N \N Salt; pepper and garlic powder
1 \N Fresh tomato; chopped (add just before serving)

From: Ana Theresa Morlet <amorlet@...> Date: Fri, 16 Aug 1996 14:56:59 -0500 (CDT) Prepare wheat. Chop, slice, dice or slice all or chop all veggies then mix together. Add picante sauce and spices. Add tomatoes. Serve with toasted warm pita or bagels. Keeps well overnight, but best if tomatoes are added just before serving. I also like to add a little extra fresh cilanto with the tomatoes. ENJOY!
