Spicy tabouleh

Ingredients

¼cupBulgar wheat (soak about 1/2 hour;dry)
¼Red onion; sliced
¼Bell pepper; sliced
1Celery stalk; diced
½Cucumber; chopped
1bunchFresh cilantro; chopped
¼bunchFresh parsley or about 1 Tbs.dry
¼cupCorn kernals
¼cupWhole red;pinto or black beans
1Spicy (16-oz) picante sause
Salt; pepper and garlic powder
1Fresh tomato; chopped (add just before serving)

From: Ana Theresa Morlet <amorlet@...> Date: Fri, 16 Aug 1996 14:56:59 -0500 (CDT) Prepare wheat. Chop, slice, dice or slice all or chop all veggies then mix together. Add picante sauce and spices. Add tomatoes. Serve with toasted warm pita or bagels. Keeps well overnight, but best if tomatoes are added just before serving. I also like to add a little extra fresh cilanto with the tomatoes. ENJOY!
