Ingredients

1cupBulgur wheat, uncooked
2cupsBoiling water
cupVegetable oil
cupLemon juice
2teaspoonsSalt
1teaspoonPepper
½cupParsley, chopped
3tablespoonsMint, fresh chopped or,
2teaspoonsMint, dry crumbled
6eachesGreen onions & tops, minced
2eachesTomatoes, chopped

Directions

Pour boiling water over wheat in a bowl. Let stand one hour. Drain well and return to bowl. Add remaining ingredients and blend well.

Chill at least two hours. Serve on a bed of lettuce.
