Tabouli with fresh mint

| 2 | cups | Water; boiling |
| 2 | Tomatoes; seeded, finely diced | |
| 1 | bunch | Scallions; sliced |
| 3 | teaspoons | Fresh mint leaves; chopped |
| 2 | cups | Fresh parsley; finely chopped |
| ½ | cup | Lemon juice |
| ¼ | cup | Olive Oil |
| Black Pepper; freshly ground, to taste | ||
Directions
Cost: $- Preparation Time: 15 minutes Difficulty Level: 2 Servings: 8 as a side dish 1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).
2. Drain well in a fine strainer.
3. Return bulgur to the bowl and add all other ingredients; mix well.
4. Chill for 2 hours.
