Tabouli with fresh mint

Yield: 8 servings

Measure Ingredient
1 cup Bulgur wheat
2 cups Water; boiling
2 \N Tomatoes; seeded, finely diced
1 bunch Scallions; sliced
3 teaspoons Fresh mint leaves; chopped
2 cups Fresh parsley; finely chopped
½ cup Lemon juice
¼ cup Olive Oil
\N \N Black Pepper; freshly ground, to taste

Cost: $- Preparation Time: 15 minutes Difficulty Level: 2 Servings: 8 as a side dish 1. Place uncooked bulgur in a bowl; pour boiling water over it and let it soak 1 hour (stir occasionally).

2. Drain well in a fine strainer.

3. Return bulgur to the bowl and add all other ingredients; mix well.

4. Chill for 2 hours.
