½cupTomato; peeled, cored and

¼cupChopped green coriander
2tablespoonsChopped fresh mint
4ouncesVirgin olive oil
4ouncesFresh lemon juice
Salt and pepper

Directions

Toss everything together in a bowl and add salt and pepper to taste. Let salad sit for about an hour before serving.
