City chicken

Measure Ingredient
2 pounds Veal ++ cut into 1 1/2\"cubes
⅔ cup Cracker crumbs ++ fine
1½ teaspoon Salt
1 teaspoon Paprika
¾ teaspoon Poultry seasoning
1 each Egg ++ slightly beaten
2 eaches Tb milk
3 eaches Tb shortening
1 teaspoon Chicken bouillon
½ cup Boiling water


Thread veal cubes onto 6 wooden skewers. Combine crumbs, salt, paprika, and poultry seasoning. Combine egg and milk. Dip veal into egg mixture, then into crumb mixture to coat. Brown slowly on all side in hot shortening. Dissolve bouillon in boiling water, add to meat. Cover and bake at 350-degrees for 45 minutes. Uncover and bake for another 30 minutes.
