Fast chicken

Yield: 6 servings

Measure Ingredient
¼ cup Vegetable oil
2 tablespoons Lemon juice
1 cup Parmesan cheese; grated
½ cup Biscuit baking mix
¼ teaspoon Pepper
3 xes Chicken breasts, whole; split,skinned,boned,flat'nd
2 tablespoons Margarine or butter

In a small bowl, mix the oil and lemon juice. In a shallow bowl, mix the cheese, biscuit mix, and pepper. Dip the chicken in the oil mixture, then coat with the cheese mixture. In a large skillet, heat the margarine over medium heat until hot. Saute the chicken until golden and done, about 3 to 5 minutes on each side.
