Chocolate snackin' cake+

Yield: 9 servings

Measure Ingredient
1¼ cup All-purpose flour
¾ cup Sugar
¼ cup Unsweetened cocoa
¾ teaspoon Baking soda
⅛ teaspoon Salt
1 teaspoon Instant coffee granules
⅓ cup Plus 2 tb. hot water
3 tablespoons Margarine, melted
½ teaspoon Vanilla extract
1 \N Egg, beaten
\N \N Baking spray with flour
1 teaspoon Sifted powdered sugar

Combine first 5 ingredients in a large bowl, and stir well; make a well in the center of mixture. combine coffee granules and hot water in a bowl, stirring until dissolved. Stir in margarine, vanilla and egg; add to dry ingredients. Stir just till dry ingredients are moistened.

Spoon batter into an 8" baking pan that has been coated with baking spray. Bake at 350 degrees for 23 minutes or until a wooden pick inserted in the middle comes out clean. cool 10 minutes in pan on a wire rack. Sprinkle with powdered sugar. Yield: 9 servings (about 179 calories per 2½" square.
