Yield: 9 servings
|1⅔ cup||All-purpose flour|
|1 tablespoon||Poppy seeds|
|1 teaspoon||Baking soda|
|¾ cup||Skim milk|
|3 tablespoons||Fresh lemon juice|
|3 tablespoons||Margarine, melted|
|1 teaspoon||Grated lemon rind|
|1 \N||Egg, beaten|
|\N \N||Baking spray with flour|
Combine first 5 ingredients in a large bowl, and stir well; make a well in center of mixture. Combine milk and next 4 ingredients in a bowl; add to dry ingredients. Stir just until dry ingredients are moistened.
Spoon batter into an 8" square baking pan coated with baking spray.
Bake at 375 degrees for 28 minutes or until a wooden pick inserted in center comes out clean. cool 10 minutes in pan on a wire rack. Yield 9 servings (about 200 caloriesper 2½" square.
