Gingerbread snackin' cake+

Yield: 9 servings

Measure Ingredient
1½ cup All-purpose flour
⅓ cup Raisins
¼ cup Plus 3 tb. sugar
1½ teaspoon Baking soda
½ teaspoon Salt
½ teaspoon Ground cinnamon
½ teaspoon Ground ginger
⅛ teaspoon Ground cloves
¼ cup Hot water
¼ cup Molasses
¼ cup Margarine, melted
1 \N Egg, beaten
\N \N Baking spray with flour

Combine first 8 ingredients in a large bowl, and stir well; make a well in center of mixture. Combine water and next 3 ingredients. Stir just till dry ingredients are moistened.

Spoon batter into an 8" square pan coated with baking spray. Bake at 350 degrees for 30 minutes or until a wooden pick inserted in the middle comes out clean. cool 10 minutes in pan on wire rack. Yield: 9 servings (about 200 caolories per serving.) Mary Riemerman
