Chocolate sauce

2 cups milk 1 tablespoon castor sugar 5 egg yolks 75 g Small's dark chocolate, broken in squares 2 tablespoons chocolate liqueur Bring the milk to boil in a saucepan. Beat together castor sugar and yolks. Pour on a little boiling milk and mix with wooden spoon.

Return mixture to saucepan with rest of milk and cook over low heat until mixture coats back of spoon. Strain into bowl, add chocolate, stir until dissolved. Allow to cool, add chocolate liqueur. Chill, covered, in refrigerator until serving time. Bon-Appetit, Exec.Chef.
