Chocolate peanut butter pudding

Yield: 1 Servings

Measure Ingredient
1 cup Sugar
3 tablespoons Cornstarch
3 tablespoons Cocoa powder, heaping
3 tablespoons All purpose flour
3 cups Lowfat milk
3 \N Egg yolks
½ cup Chunky peanut butter
2 teaspoons Unsalted butter
1 teaspoon Vanilla extract

Combine first 4 ingredients in a heavy non-reactive saucepan. Stir in milk and egg yolks. Bring to a boil over medium high heat, stirring constantly.

Immediately remove from heat. Stir in peanut butter, butter and vanilla until butter is melted. Mix thoroughly. Transfer to a serving bowl. Press plastic wrap over pudding surface to prevent skin from forming. Serve warm or cold. This recipe serves 8.
