In a large bowl, beat butter and sugar with an electric mixer on medium until light and fluffy, about 2 mins. Beat in eggs and vanilla and beat 1 to 2 mins. longer. Add melted chocolate and dissolved coffee and beat 1 min, until thoroughly blended. Beat in flour and salt until well blended. 2. Stir in walnuts and chocolate chips. Drop by tablespoonfuls 2 inches apart onto ungreased cookie sheets. 3. Bake 10 to 12 mins, or until barely set. Let cookies cool on pans 5 mins before removing to wire racks to let cool completely.
NOTE: DISSOLVE COFFEE IN 1 TBS BOILING WATER.
