Chocolate bourbon muffins

Yield: 9 Servings

Measure Ingredient
¾ cup Flour
½ teaspoon Baking soda
¼ teaspoon Salt
½ cup Sugar
½ cup Softened lightly salted butter or margarine
1 Egg
1 (1-oz) square melted semisweet chocolate
1 tablespoon Bourbon
1 teaspoon Vanilla
½ cup Semisweet chocolate chips
½ cup Chopped pecans

Preheat oven to 400øF, prepare pans. In a bowl mix first three ingredients.

In another bowl cream butter & sugar until light & fluffy, beat in chocolate, egg, bourbon & vanilla. Add dry mix to wet mix until just combined, stir in chips & nuts. Spoon into pans & bake for 15-20 mins or until done. Makes 9. These muffins freeze well.
