Chilled exotic fruit soup

Ingredients

1Pineapple peeled; diced and

2Green apples; peeled, diced and core removed
2Papayas; peeled and diced
2Mangos; peeled and diced
6Passion fruits; scooped
4cupsOrange juice
8Cloves
10Allspice berries
25Peppercorns
3Vanilla beans
Seedless grapes; bananas or any combination of
Fresh fruits

In a large 8 quart pot place all but last 3 ingredients (these are for garnish), and bring to a boil. Reduce to simmer and cook 1 hour. Remove from heat and let cool in pot. This is very important for infusing flavors.

Puree and strain through fine sieve. Add scraped vanilla beans, mix.

Refrigerate and serve ice cold. Garnish with grapes and bananas. Yield: 6 to 8 servings
