Chilled orange-cantaloupe soup

Ingredients

2 | mediums | Ripe cantaloupes peeled, seeded cut into large chunks |
¼ | cup | Plus 2 tbs superfine sugar |
¼ | cup | Plus 2 tbs orange juice |
½ | teaspoon | Orange zest finely grated |
2 | tablespoons | Slivered mint |
Sugar cookies (opt) for serving |
Directions
In a blender, working in batches, combine the cantaloupes, sugar, orange juice and orange zest and blend until smooth. Transfer to a large bowl and refrigerate until chilled for at least 45 minutes.
Serve in shallow bowls or large cups, garnished with the mint and accompanied with the cookies.
