Chicken/turkey and mushrooms parmesan

Ingredients

| 1 | pounds | Boned chicken or turkey breasts,cut into strips | 
| ¼ | cup | Chopped onion | 
| 2 | tablespoons | Oil | 
| 10¾ | ounce | Can condensed cream of mushroom soup | 
| ¼ | cup | Water | 
| 2 | tablespoons | Dry sherry wine | 
| 1 | cup | Sliced mushrooms | 
| ½ | cup | Sliced red or green bell pepper | 
| ¼ | cup | Grated Parmesan cheese | 
| 1 | Bag Minute Rice Boil in Bag rice,cooked | |
Directions
Cook and stir chicken and onion in hot oil in a skillet until chicken is lightly browned and onion is tender. Stir in soup, water and wine. 
Add mushrooms, peppers and cheese. Bring to a boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally. Serve over rice. 
Top with additional cheese, if desired.
