Chicken/turkey and mushrooms parmesan

Ingredients

1poundsBoned chicken or turkey breasts,cut into strips
¼cupChopped onion
2tablespoonsOil
10¾ounceCan condensed cream of mushroom soup
¼cupWater
2tablespoonsDry sherry wine
1cupSliced mushrooms
½cupSliced red or green bell pepper
¼cupGrated Parmesan cheese
1Bag Minute Rice Boil in Bag rice,cooked

Directions

Cook and stir chicken and onion in hot oil in a skillet until chicken is lightly browned and onion is tender. Stir in soup, water and wine.

Add mushrooms, peppers and cheese. Bring to a boil. Reduce heat; cover and simmer 10 minutes, stirring occasionally. Serve over rice.

Top with additional cheese, if desired.
