Cheese and onion potatoes

| 4 | mediums | Red potatoes -- sliced 1/4\" thick, unpeeled |
| 2 | tablespoons | Dried onions -- minced |
| 1 | dash | Pepper |
| ⅓ | cup | Shredded cheddar cheese |
| Chopped parsley -- fresh | ||
Directions
In a skillet, melt butter over med.-high heat. Add potatoes, onion and pepper; toss to coat. Cover and cook, stirring occasionally, until potatoes are tender about 10 min. Uncover; cook until potatoes are browned, about 5-7 min. Top with cheese. Cover and remove from the heat; let stand for several minutes. sprinkle with parsley before serving. Yield: 4 servings.
