3 pounds | Chicken, cut-up |
⅓ cup | Flour |
2 teaspoons | Salt |
⅓ cup | Oil |
½ cup | Onion, diced |
½ cup | Celery, diced |
½ cup | Green bell pepper, diced |
1 cup | Catsup |
1 cup | COCA-COLA CLASSIC |
2 tablespoons | Worcestershire sauce |
1 tablespoon | Salt |
½ teaspoon | Salt, hickory smoked |
½ teaspoon | Basil leaves |
½ teaspoon | Chili powder |
⅛ teaspoon | Pepper |
Rinse the chicken and pat dry. In a bowl, mix the flour and 2 teaspoons of salt. Coat the pieces with the flour mixture. In a skillet, heat the oil. Brown the chicken all sides. Remove the browned chicken and place in a 3 quart casserole. Discard the drippings.
In a bowl, combine the remaining ingredients, mixing well. Spoon sauce over the chicken, making sure that all pieces are covered.
Cover casserole.
Bake in a preheated, 350 degree F oven for about 1-¼ hours, or until chicken is fork-tender. If desired, serve the chicken with the sauce over hot rice. Makes 4 to 6 servings with about 3 cups of sauce.
