3 tablespoons | Butter |
1 pack | (8-oz) link sausages |
6 \N | Eggs |
½ cup | Half-and-half |
\N \N | Salt to taste |
\N \N | Pepper to taste |
1 dash | Chives |
⅛ teaspoon | Parsley |
¼ cup | Cooked bacon; crumbled |
1 cup | Monterey Jack cheese |
1 \N | 9-inch pie shell; baked |
Fry sausages, slice and set aside. Melt butter in a large skillet.
Meanwhile, combine all remaining ingredients (except the cheese) in a bowl and whip with a wire whisk. Pour into the skillet and cook on low heat, stirring with a fork until the eggs are cooked, but still soft. Pour the mixture into a 9-inch pie shell. Place sausages on top of the egg mixture, top with cheese, and place under the broiler until the cheese is melted, about 3-4 minutes.
