Brazilian rice

Yield: 2 servings

Measure Ingredient
3 ounces Cauliflower flowerets; cut in bite size pieces
2 tablespoons Fresh parsley; chopped
2 tablespoons Sunflower oil
½ teaspoon Soy sauce
½ teaspoon Salt
3 ounces Black beans; cooked
3 ounces Brown rice; cooked
3 ounces Avocado; sliced

Preheat the oven to 375 degrees. Lightly grease a 4 x 8 baking pan with sunflower oil. Steam the cauliflower for about 5 minutes.

Combine all the ingredients except for the avocado. Mix well.

Transfer to baking pan and bake for 15 minutes. After 15 minutes, garnish with avocado slices. Serve.
