Ingredients

3ouncesCauliflower flowerets; cut in bite size pieces
2tablespoonsFresh parsley; chopped
2tablespoonsSunflower oil
½teaspoonSoy sauce
½teaspoonSalt
3ouncesBlack beans; cooked
3ouncesBrown rice; cooked
3ouncesAvocado; sliced

Directions

Preheat the oven to 375 degrees. Lightly grease a 4 x 8 baking pan with sunflower oil. Steam the cauliflower for about 5 minutes.

Combine all the ingredients except for the avocado. Mix well.

Transfer to baking pan and bake for 15 minutes. After 15 minutes, garnish with avocado slices. Serve.
