Blueberry mini muffins^

Yield: 36 servings

Measure Ingredient

2 cups Flour
½ cup Sugar
3 teaspoons Baking powder
½ teaspoon Cinnamon
⅛ teaspoon Salt
1 Egg
¾ cup Milk
⅓ cup Oil
1 teaspoon Vanilla
1 cup Fresh or frozen blueberries,
Do not thaw

Preheat oven to 400F.

Combine dry ingredients. Combine wet ingredients. Mix just until wet.

Fold in

berries. Put into 36 sprayed mini muffin cups.

Bake 10-15 minutes until light golden brown and test clean. Remove immediately

from pan.

Per muffin:

60 cal., 1g pro., 9g carb., 0g fiber, 2g fat, 35mg sod., 20mg pot., ½ starch

and ½ fat exchanges.
