Blt in bibb lettuce cups

4 | Tomatoes; seeded and chopped fine (about 2 cups) | |
½ | cup | Finely diced smoked mozzarella |
¼ | cup | Finely shredded arugula leaves |
6 | slices | Bacon; cooked until crisp and crumbled |
¼ | cup | Finely chopped sweet onion |
2 | tablespoons | Olive oil |
2 | teaspoons | Balsamic vinegar |
24 | Outer bibb lettuce leaves (about 4 heads), washed and patted dry |
Directions
In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and serve immediately.
Yield: 24 hors d'oeuvres
