Blt in bibb lettuce cups

Ingredients

4Tomatoes; seeded and chopped fine (about 2 cups)
½cupFinely diced smoked mozzarella
¼cupFinely shredded arugula leaves
6slicesBacon; cooked until crisp and crumbled
¼cupFinely chopped sweet onion
2tablespoonsOlive oil
2teaspoonsBalsamic vinegar
24Outer bibb lettuce leaves (about 4 heads), washed and patted dry

Directions

In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and serve immediately.

Yield: 24 hors d'oeuvres
