Blt in bibb lettuce cups

Yield: 1 Servings

Measure Ingredient
4 \N Tomatoes; seeded and chopped fine (about 2 cups)
½ cup Finely diced smoked mozzarella
¼ cup Finely shredded arugula leaves
6 slices Bacon; cooked until crisp and crumbled
¼ cup Finely chopped sweet onion
2 tablespoons Olive oil
2 teaspoons Balsamic vinegar
24 \N Outer bibb lettuce leaves (about 4 heads), washed and patted dry

In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and serve immediately.

Yield: 24 hors d'oeuvres
