Bibb and watercress salad

Ingredients

1 | medium | Pepper, green; finely choppd |
1 | medium | Cucumber; peeled, seeded, and finely chopped |
½ | cup | Onion, green; sliced |
2 | Heads lettuce, bibb | |
2 | Heads radicchio | |
1 | cup | Watercress; torn |
½ | cup | Vinegar, white wine |
1 | teaspoon | Mustard, Dijon |
¼ | teaspoon | Salt |
⅛ | teaspoon | Pepper, coarsely ground |
½ | cup | Oil, vegetable |
Directions
Combine first 3 ingredients, and set aside.
Arrange Bibb lettuce and radicchio leaves evnely on individual salad plates; top with vegetable mixture, and sprinkle with watercress. Set aside.
Combine vinegar and next 3 ingredients in contgainer of an electric blender; process 1 minute.
Turn blender on high; gradually add oil in a slow, steady stream. Pour dressing over salads, and serve immediately.
