Bean mustard

2poundsGreen or Yellow beans OR
2cansGreen or wax beans (15 oz ea)
4tablespoonsDry mustard
teaspoonTurmeric
4tablespoonsFlour
teaspoonCelery seed
cupSugar
cupCider vinegar

Directions

If using fresh beans, trim and cut in desired lengths and cook til just crisp. Mix into a paste the flour, mustard, celery seed, turmeric and some cold vinegar. Bring vinegar and sugar to a boil. Add paste and stir to blend. Cook 5 minutes. Add beans and continue cooking til everything is uniformly hot. Bottle.
