½cupGrated parmesan cheese
1tablespoonDry basil (or one bunch fresh chopped)
½teaspoonPepper
½teaspoonSalt -- optional
2Cloves minced garlic to taste
4ouncesSliced black olives-drained
¾cupSun-dried tomatoes rehydrated and chopped
1tablespoonOlive oil -- optional

Directions

Put cooked basmati into large mixing bowl. Toss hot rice with remaining ingredients using wooden spoons to avoid breaking grains.

Serve immediately.
