Basic pasta filling

| 2 | cups | Mozzarella cheese; grated |
| 1 | cup | Parmasean cheese; grated |
| 2 | Large egg yolks | |
| 1½ | tablespoon | Fresh garlic; minced |
| 1 | tablespoon | Dry oregano |
| 1 | tablespoon | Dry basil |
| To Taste kosher salt | ||
| To Taste black pepper | ||
Directions
1. Combine all ingredients.
VARIATIONS:
***add 20 ounces of frozen spinach, well wrung out.
***add 1 cup finely chopped proscuitto ***add ½ cup chopped, cooked pancetta or hot ham *** substitute different herbs
