Barbecued pheasant - china

Measure Ingredient
2 Pheasants-whole
¼ cup Soy sauce
2 Garlic cloves-minced
2 teaspoons Salt
¼ teaspoon Pepper
1 teaspoon Sugar
1½ teaspoon Five spice
2 tablespoons Oil

Wash and dry pheasants. Mix together the soy sauce, garlic, salt, pepper, sugar, five spices and oil. Rub the pheasant inside and out.

Let stand for one hour. Place on a rack in a shallow roasting pan.

Roast in a 425 oven for two hours or until tender and brown. Baste and turn frequently. To serve, carve into joints or chop up into inch wide pieces Chinese fashion.
