Banana yogurt pancakes

Yield: 5 servings

Measure Ingredient
1 cup Flour
1½ teaspoon Sugar
1 teaspoon Baking powder
¼ teaspoon Soda
¼ teaspoon Salt
1 Egg, separated
1 cup Plain, non-fat yogurt
¼ cup Skim milk
2 Bananas, mashed

Sift together dry ingredients. Set aside. Mix together beaten egg yolk, yogurt, milk, and bannana. Add to four mixture, mixing well.

Fold in whipped egg white, and pour into oiled pan or waffle iron.

Cook each side until brown.
