2 \N | Jars baby food prunes |
½ cup | Brown sugar, or less |

½ tablespoon | Baking powder |
1 teaspoon | Cinnamon |
1 dash | Allspice |
\N \N | Zest of 1/2 lemon, or more |
2 \N | Egg substitutes, beaten |
1½ teaspoon | Vanilla |

Preheat oven to 350.
In large bowl, mix dry ingredients. Combine wet ingredients thoroughly, and add to dry ingredients. Mix until evenly moistened (do NOT overmix). Spread batter into a loaf pan that has been prepared with oil spray.
Bake 45-50 mins til a knife inserted comes clean. Let cool in pan 10 mins, then cool completely on rack.
