Banana bread (vegan)

Ingredients

½teaspoonSalt
¼teaspoonBaking soda
4Ripe bananas, mashed
2Jars baby food prunes
½cupBrown sugar, or less
Juice of one lemon
Raisins
½tablespoonBaking powder
1teaspoonCinnamon
1dashAllspice
Zest of 1/2 lemon, or more
2Egg substitutes, beaten
teaspoonVanilla
Dried cherries

OPTIONAL INGREDIENTS

Preheat oven to 350.

In large bowl, mix dry ingredients. Combine wet ingredients thoroughly, and add to dry ingredients. Mix until evenly moistened (do NOT overmix). Spread batter into a loaf pan that has been prepared with oil spray.

Bake 45-50 mins til a knife inserted comes clean. Let cool in pan 10 mins, then cool completely on rack.
