Baked sweet potatoes w/ginger & honey

1 | can | (16-oz) small sweet potatoes cut into 1/2\" cubes (we used 2 medium sweet potatoes) |
¼ | cup | Honey |
1½ | tablespoon | Grated fresh ginger (we used rehydrated minced--maybe that's why it was so strong (in pockets)!) |
½ | teaspoon | Ground cardamom |
¼ | teaspoon | Ground black pepper |

Tried a new recipe last night that was good, although a little ginger-y for our tastes. Since there are a number of ginger lovers on this list, thought I'd share! From Prevention's Quick and Healthy Low-Fat Cooking (Mediterranean).
Combine all ingredients. Bake in 8x8" baking dish at 400øF for 20 minutes.
The original recipe called for 1 tablespoon olive oil and a non-stick-sprayed baking dish, neither of which we used. No sticking, no problems.
