Baked potato crisps

Yield: 24 Servings

Measure Ingredient
2 cups Potato peelings, with flesh
2 tablespoons Unsalted butter

Preheat oven to 450 degrees F. Place skins on lightly oiled or buttered baking sheet. Dot with butter. Bake until skins are quite golden and crisp (about 20 minutes). Drain on paper towels and serve immediately.
