Baked ham and apples (microwave)

Yield: 6 servings

Measure Ingredient
3 cups Ham; cooked and diced
3 eaches Cooking apples; unpeeled and cut into wedges
½ cup Brown sugar; firmly packed
2 tablespoons All-purpose flour
2 tablespoons Lemon juice
1 tablespoon To 2 tb prepared mustard
1 teaspoon Grated orange rind
1 tablespoon Parsley; chopped, fresh

Combine first 7 ingredients; mixing well. Spoon mixture into a 2-quart casserole, and cover with heavy-duty plastic wrap. Microwave at HIGH for 7 to 9 minutes or until apples are tender, stirring mixture after 4 minutes. Sprinkle parsley over top.
