2 tablespoons | Butter |
1 cup | Finely diced cooked ham; (about 1/4 pound) |

½ teaspoon | Rubbed sage |
¼ teaspoon | Thyme |
¼ teaspoon | Tarragon; crushed |
¼ cup | Flour |
½ teaspoon | Baking powder |
1 cup | Small curd cottage cheese |
2 cups | Grated Monterey Jack cheese |
Coat 4 (1-cup) bakers with butter, using 1 teaspoon per dish. Saute ham in remaining butter about 5 minutes. Place in baking dishes. Beat eggs with salt, pepper seasoning, sage, thyme, tarragon, flour and baking powder.
Stir in cheeses. Spoon into baking dishes. Bake in 400 degree oven 15 minutes. Reduce heat to 325 degrees and bake 15 minutes longer or until puffed and golden.
Makes 4 servings.
