Avocado stuffed with chicken salad

1.00tablespoonchopped fresh red pepper
1.00teaspoonchopped fresh chives
1salt; to taste
1freshly ground black pepper; to taste
1.00ripe avocado; halved, pit removed,
1and peeled
4.00radicchio leaves

Directions

In a bowl combine; chicken, mayonnaise, orange zest, shallots, red pepper, and chives. Season to taste with salt and pepper. Divide the salad between the two avocado halves, filling the cavity. To serve, place 2 radicchio leaves on each serving plate and top with an avocado half. This recipe yields 2 servings.
