Avocado and pine nut salad - bon appetit

Ingredients

1Head lettuce, torn into bite-size pieces
1Avocado, peeled, pitted and chopped
1Tomato, chopped
cupPine nuts, toasted
¼cupAlfalfa sprouts
¼cupMinced red onion
¼cupGrated mozzarella
2tablespoonsWhite wine vinegar
tablespoonDijon mustard
6tablespoonsOlive oil
Salt and pepper

Directions

Place lettuce in large bowl. Add avocado and next 5 ingredients.

Whisk vinegar and mustard in small bowl. Gradually whisk in oil.

Season with salt and pepper. Pour ⅓ C dressing over salad and toss.

Serve, passing remaining dressing.
