Avocado and pine nut salad - bon appetit

Ingredients

1 | Head lettuce, torn into bite-size pieces | |
1 | Avocado, peeled, pitted and chopped | |
1 | Tomato, chopped | |
⅓ | cup | Pine nuts, toasted |
¼ | cup | Alfalfa sprouts |
¼ | cup | Minced red onion |
¼ | cup | Grated mozzarella |
2 | tablespoons | White wine vinegar |
1½ | tablespoon | Dijon mustard |
6 | tablespoons | Olive oil |
Salt and pepper |
Directions
Place lettuce in large bowl. Add avocado and next 5 ingredients.
Whisk vinegar and mustard in small bowl. Gradually whisk in oil.
Season with salt and pepper. Pour ⅓ C dressing over salad and toss.
Serve, passing remaining dressing.
